Marlin belongs to the family of spearfishes. It is one of the fastest swimmers and jumpers. It may reach a length of up to 4.50 meters and weigh up to about 750 kg. The colouring of the back is dark blue to light-grey, while the bottom is silvery. Its slightly reddish and very muscular meat has a mild flavour and is similar to that of tuna and sword fish. The firm but tender steak is ideal for roasting and grilling. Particularly on the Asian market, marlin is a highly paid fish, which is especially suitable for Sushi besides grilling or roasting. It occurs in the entire Atlantic.
